Lawar is a traditional Indonesian Balinese dish of which there are many variations, but typically it contains shredded coconut, and some kind of meat, and as I would find out and learn myself - pig’s blood.
Ayu is such an impressive cook, and for the different types of lawar, she mixed and matched all the ingredients, and mixed up everything with her hand to create these incredible salad like coconut mixtures. I didn’t know this until Ayu told me, but the traditional versions of Balinese lawar typically contain some raw blood mixed in, which creates a type of sauce.
After Ayu mixed up a bunch of different types of lawar, we sat down for what was easily one of the best meals I had in Bali, Indonesia. The food was impressively delicious, and the love that went into the cooking was also a huge contribution to what made this meal so special. This is one of those meals I’ll never forget.

[music]. hey everyone hope you're having an. amazing day it's mark wiens i'm in bali . indonesia and i'm on my way today to go . visit a local balinese village where i'm . gonna meet up with a lady who . specializes well she's an amazing. balinese cook and she's gonna cook us. some very rare hard to find traditional. balinese food i can't wait to share it . all with you today okay good morning how . far away is the village from here it's . about 150 minutes something like that . okay yeah and it's just just north of . ubud note is. [music]. that was a beautiful drive through the . countryside we passed by so many rice . terraces and through jungle we're gonna . meet up with i you okay amazing the . aromas coming out of here are amazing. and she has already prepared quite a few . dishes and these are some of the . ingredients that are gonna go into the . dishes but oh man does it smell . incredible and yeah she is . she's busy cooking right now good girl i . know okay nope no no coconut for the . livadia they're gonna make some . different versions of loud right now . which is a balinese mix and so first i . think this is some pig fat and some . minced pork yeah yeah and then now he is . shredding up some roasted coconut and. this is this is coconut which has just . been i think fire roasted this shot . somebody garam you like spicy . [music]. it's pork blood pig blood pork blood . okay lemon okay . the dish is called levada toulon and she . began with some minced pork and some. pork fat and then she mixed in some some . some bob goading some fried chilies and . also some crispy shallots yeah this is. valley liz lange with taku okay and . indonesia our puppies love our puppies. okay the fern okay yeah this is long . binh okay so i mix this okay that's a . different lip so you test different okay . so you can have many types of lower okay . okay that for you ready hit for uk . mudblood up to you however you the way . you eat it i want to eat the way you eat . it. [music]. this is pig blood all right . yeah people i always pick butter chicken . blood or please blood this better people . yeah. the young jackfruit yeah move into a . machine a monomer ago what and okay okay . next she's gonna make sambal matah and . sambal matah is one of the greatest. greatest things to eat in in bali so . it's chilies and shallots and galangal . lemongrass coconut oil okay okay indigo . we didn't wait and immediately as she . added that coconut oil you can just . smell the aroma of that coconut coming . out and oh she's such a such an expert. at at mixing with her hand and oh that's. just chunky and that is gonna be packed . full of flavor . oh sure paste yeah okay a little bit of . shrimp paste goes into yeah i'm sitting . from shrimp okay and a little bit of . lime as well when people ceremony all . the mixture of cream with chicken okay . because tomorrow after ceremony is not a . lot of ribs . this is make they put more coconut the . food is already this is a traditional . balinese lower feast most of the dishes . that we're eating are all love arts the . traditional ones have the raw blood so . most of them have raw blood in it as. well and oh oh it's beautiful there's . two types of rice this is the main white . rice and then this type of rice is with . potatoes right sweet potato sweet sweet . potato and what's the name of this race. masiello nasi cell ah okay okay so this . is the super day i'll go for some of the . rice with the sweet potato . this is a special type of rice and then . you come through all the dishes and take . a little bit of each dish so i've got to . start with these this one is the blood . lard with jackfruit i'll put a little . bit of this onto the side of my rice the . long bean lawar again with blood you can . see that red color out a little bit . there throat shrug shrug shrug and this . is the chicken dish oh you get look at . all that dry coconut in there wow i will . set some of this that looks amazing that . look that smells so good . all right this is another low water made . with mostly coconut real lots and lots . of shredded coconut in there i'll stick . this on the outside here wow it's . absolutely beautiful the colors this one . is another chicken which is grilled with . some ball stick this there you have two . different types of sambal this one is . mother that she mixed up with coconut . oil just to give this on the side here . and then the other son ball is the sun . ball goating which is the fried chili . sun ball which also looks unbelievably . good look at that with coconut oil right . okay okay is that a good plate okay and . then fried onion and garlic on the top. of the rice oh-ho that just had some . good oh there's one dish i forgot it's . the this one right here this is another . la water made with the puppies oh that's . similar to entire the pup food it's the . it's the fern and this one you can see . also it's is red but the green kind of . covers up the red but there's also blood. in this one too i will i need a i need a . free spot okay i'll i'll scoot over the . the chicken there i think i managed to . get every. every dish on one plate and while that . is absolutely stunning . thank you and also one more dish is the . tomb okay okay and a couple of tombs and . that is a complete. traditional balinese mule right there . this is a stunningly pretty plate of . food and that these are the tombs which . i'm gonna which are boiled and banana . leaf oh wow oh that looks great . some kind of mm-hmm it smells very green . this one feels very dense unravel this . banana leaf packet oh nice . okay perfect okay i'm ready to dig into . this feast take some of the low hour . this is this is the one with lots of . coconut in it mix it into the rice oh oh . that is unbelievable that is like almost . all shredded coconut so it has that . wonderful crispness to it but then it is . spicy you can taste the the fried . chilies and the fried shallots in there . very very nicely it's spicy and the . blood you don't really you don't taste . the blood all that much you just sort of . acts like a like a hydration like i like . the sauce of it oh it's it's stunning. next up i'll try the jackfruit lawar . with blood again and i will add in some . of the sambal some vocoding okay okay i . you has instructed me to add some some . some bogota into that and a little bit . salt and also i should add a little bit . of salt. okay oh that's absolutely that is . absolutely sensational oh it's so good . those fried chilies and then the . jackfruit is it's cooked very very soft . it's very smooth and again the blood . just acts to to like hold the sauce . together it's so incredibly flavorful . [music]. immediately i can taste the coconut oil . that was like the first taste i taste . because there's because she added so . much coconut oil into that sambal but . then after that you can taste the . galangal you can taste the new . lemongrass in there and the chilies and . then that got some wonderful like . running free-range chicken for sure okay . now for the the next chicken with the . coconut as well and i think i'll add . some sambal goating to that . [music]. hmm oh yeah . the shredded coconut is just overwhelms . and now it's still incredibly good it . you can taste that dry coconut flavor. and then i say yeah i can still taste . all of that that like coconut oil . coconut oil is very heavily used in . balinese cooking okay now for the for . that boom and this one i'm not totally . sure what's in here oh is this one blood . so it's cooked blood and so that's why. it looks kind of like a like a meaty . cake i'll take some of this again you . have to mix with you got to take . everybody with some sambal that both. some walls are just impressive oh yeah . that tastes like that a lemongrass blood . cake it's awesome it's so herbal and the . blood is just acting to to act . it's the casserole factor it's holding. it all together we've got another lower . here this one is with the long beans and . i'm already running out of rice oh honey . i need to i do need to add some more . rice to the middle of my my plate here . but this is and add some more some ball . oh that polka nut oil and this mixture . of low art it's different absolutely . sensational these are some dishes like . i've never had before and these are some . really truly authentic balinese dishes . the food is absolutely amazing thank you . very much . how you think the food is amazing it's . so good teddy mccarthy it's amazing i . think the love are this one the low are . with coconut yeah i think my my favorite . okay yeah that is the when i added on . some more rice to my plate and this. particular lawar with the la barthe luna . flower - luna - length okay which is . with the shredded lots and lots of. shredded coconut and the blood make . with the sambal goading that is possibly . the greatest well possibly one of the . greatest bites ever oh it's so it's so . unbelievably good that's just one of . those bites like you take in disbelief. the coconut the chili's it's salty you . can just get that essence of the blood . it's absolutely insane. [music]. this is a truly truly happy meal and a . very learning experience as well oh . [music]. the flavors are sensational just . finished with lunch that is one of those . meals where i did not want to stop . eating the food is just so incredibly . good and and that's the type of food . that really is difficult to find that . quality and that freshness and that kind . of love at a restaurant it's really home . cooked balinese food that was that was . special that was a real privilege to . have that opportunity . oh man my mouth is still every taste bud . within my without on my tongue and . within my mouth is just like completely . open and just completely maximized in . flavor right now function so this one . down usually the older people sleep . there and then this one special two . preparing the ceremony south side is . kitchen okay . and where's the young and then over in . the back that is the family temple . family temple . okay and everything family come humbly a . component a temple up again so every . balinese family compound usually has a. temple in the back also this is a very . typical balinese style compound . traditional style all the different . rooms have a purpose and all the . different villas now in the back of the . house check out all these pomelos oh . there's pom lowe's and here are all of . the chickens that you heard squawking . while we were eating all the roosters . [applause]. bali coffee copy thank you very much . it's coffee and dessert time so got a. fresh cup of coffee and we've also got . some some desserts i'm gonna try this . one made with black sticky rice is it . well ii well whoa can you hear that pig . screaming in the background. okay i'm gonna try this . [music]. mm-hmm oh it's really really really . really gummy kind of sticks to the roof . of your mouth it's sweet but not overly . sweet . maybe palm sugar fragrant mmm it's nice . it's like a it's like a sticky rice cake . that's the type of snack that you need . to follow with coffee oh that's . wonderful. next dessert is sticky rice with coconut . buntao buntao oh that one's not not . sweet it's mostly just coconut and . sticky rice i think and then yeah it's . not really sweet it's more kind of salty . she is packaging like way too much food . for us to bring home well her generosity . is just shining but she is so nice the . food is so incredibly good i'm taking a . little walk outside of the compound but . this is just such a such a beautiful . such a friendly such a quiet village in . bali and this is this is really a type . of a place that you can come to . experience authentic balinese culture . and my mouth is still rejoicing from . that meal wow that was good thank you . you're welcome you're welcome . what's your name what do you turn in . lidia right . yeah because antica it's nice to meet . you you have a this is a beautiful . village really nice hello teddy my kasi . thank you auntie are you kidding my kasi . that was the best the best meal i've had . in bali it was so good we're just . leaving the house a huge thank you to . you and a goon . they are such generous people and their. cooking is unbelievably good and also i . want to say a big thank you to my friend . pok choy he's he's the one that set this . up he's the one that arranged everything . we packed you a big thank you for . everything and my day is the awesomest . driver as well how was the food muddy . really good yes it's so she's an amazing . cook. [music]. they were stopping at a village along. the way back on the road to try a . traditional balinese drink them that . they may hear alleys at the herb center . used for it so they specialize in making . a drink called jammu here and it's an . herbal balinese health drink okay this . is the jungle it's a combination of . ginger and turmeric and other herbs and. spices and i think tamarind and so then . this is when she she has made and it's . served hot you can see how how yellow it . is from that that turmeric oh wow oh . very good. thank you you can really taste the . ginger in there the ginger comes in. nicely it's it kind of goes to the back . of your throat you can taste it's very . thick with turmeric it is sweet as well . but mmm that's like very very herbal and . i love that ginger oh that's extremely . soothing you can taste the jungle in the. jammu .
